1 Make the macaron batter

Sift almond flour and 1¾ cups powdered sugar together twice. Discard anything that doesn’t pass through — lumps are the enemy here. Add one drop of pink gel coloring and fold until just combined.

2 Macaronage and pipe

3 Bake

4 Make the vanilla buttercream

Beat softened butter until pale and fluffy, about 3 minutes. Add powdered sugar, heavy cream, and vanilla, then beat another 2 minutes until smooth. Pipe or spread onto half the shells, then sandwich together.

5 Dust the ombré gradient

This is the fun part. Sort your macarons into three groups. Using a dry, soft-bristle brush, dust White Luster Dust across the top third of one group — brush on, then lightly buff off the excess.
